Cooking Up Competition

Nestled in the heart of Kountze lies a new business called The Potato Shack which has already received a perfect score with county health inspectors and receiving the blue ribbon award, even though it’s only been open five weeks.

Many long-time restaurants in the county still haven’t managed to accomplish that feat.

The Potato Shack is one-woman show with Katrina Cook serving as waitress, cook, cashier and overall businesswoman.

Although Cook has degrees in private investigation and medical assistance, she felt that she needed to be at home for her five children rather than out working.

“I love being a stay-at-home mom,” Cook said. “I get to see my kids grow and learn. What mom doesn’t want that?”
